Caldo de pollo! Kinda like the one my mom made for us when we were sick.
Except now I actually like spicy stuff so I load this one up with Tapatio.
The recipe is very easy but you do need to buy a large olla, or pot. I recommend a 12 Quart stockpot. It’s the only pot you’ll ever need and you’ll be able to make pozole and every type of caldo your little heart desires!
This time around, I used 1 chayote squash, 3 carrots and 4 red potatoes. I tried to chop them up into equally sized, large, sturdy chunks. That way they don’t disintegrate when you re-heat them.
